It is also known as Kori Sukka\/Kori Ajadina in the Tulu language. Kori means\u00a0&#8220;chicken&#8221; and Sukka means &#8220;dry&#8221;.This Mangalorean Kori Sukka is a dish close to my heart. The use of coconut imparts a unique flavor profile, unlike any other dish. You can serve Kori Sukka with Roti, Neer Dosa, or Rice.<\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-full is-resized\"><img fetchpriority=\"high\" decoding=\"async\" width=\"620\" height=\"330\" src=\"https:\/\/konkanwood.com\/kok\/wp-content\/uploads\/2025\/09\/chicken-recipe_620x330_81517813176.jpg\" alt=\"\" class=\"wp-image-949\" style=\"width:733px;height:auto\" srcset=\"https:\/\/konkanwood.com\/konkani\/wp-content\/uploads\/2025\/09\/chicken-recipe_620x330_81517813176.jpg 620w, https:\/\/konkanwood.com\/konkani\/wp-content\/uploads\/2025\/09\/chicken-recipe_620x330_81517813176-300x160.jpg 300w\" sizes=\"(max-width: 620px) 100vw, 620px\" \/><\/figure><\/div>\n\n\n<h2 class=\"wp-block-heading\" id=\"step-1-prepare-spice-masala-paste\">Step 1: Prepare Spice Masala Paste<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Heat <strong>1 tbsp ghee<\/strong> in a pan.<\/li>\n\n\n\n<li>Add:\n<ul class=\"wp-block-list\">\n<li>10 Byadgi\/bedki chillies<\/li>\n\n\n\n<li>5 Kashmiri or Guntur red chillies<\/li>\n\n\n\n<li>\u2153 tsp mustard seeds<\/li>\n\n\n\n<li>\u00bc tsp fenugreek seeds<\/li>\n\n\n\n<li>1\u00bd tbsp cumin seeds<\/li>\n\n\n\n<li>2 tbsp coriander seeds<\/li>\n\n\n\n<li>\u00bc tbsp peppercorns<\/li>\n<\/ul>\n<\/li>\n\n\n\n<li>Fry well till fragrant.<\/li>\n\n\n\n<li>Grind with <strong>1-inch soaked tamarind<\/strong> (or \u00bc tsp tamarind concentrate) and little water.<\/li>\n\n\n\n<li>Keep aside.<\/li>\n<\/ul>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"step-2-prepare-onion-paste\">Step 2: Prepare Onion Paste<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Heat <strong>1 tbsp oil<\/strong> in a pan.<\/li>\n\n\n\n<li>Add:\n<ul class=\"wp-block-list\">\n<li>3 cloves<\/li>\n\n\n\n<li>2 cardamoms<\/li>\n\n\n\n<li>15 curry leaves<\/li>\n\n\n\n<li>1 small onion (sliced)<\/li>\n<\/ul>\n<\/li>\n\n\n\n<li>Fry till onion turns crispy and brown.<\/li>\n\n\n\n<li>Add:\n<ul class=\"wp-block-list\">\n<li>10 garlic cloves (with peel)<\/li>\n\n\n\n<li>1 tsp poppy seeds<\/li>\n<\/ul>\n<\/li>\n\n\n\n<li>Cook for a bit, then grind with:\n<ul class=\"wp-block-list\">\n<li>\u2153 tsp turmeric<\/li>\n<\/ul>\n<\/li>\n\n\n\n<li>Keep aside.<\/li>\n<\/ul>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"step-3-roast-coconut\">Step 3: Roast Coconut<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Lightly roast <strong>\u00bd cup grated coconut<\/strong> until golden brown.<\/li>\n\n\n\n<li>Keep aside.<\/li>\n<\/ul>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"step-4-start-chicken-fry\">Step 4: Start Chicken Fry<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Heat <strong>2 tbsp coconut oil + 1 tsp ghee<\/strong> in a heavy-bottomed pot.<\/li>\n\n\n\n<li>Add <strong>\u00bd sliced onion<\/strong>, fry till golden.<\/li>\n\n\n\n<li>Add <strong>1 kg chicken pieces<\/strong> (washed and dried).<\/li>\n\n\n\n<li>Season with salt and a pinch of turmeric powder.<\/li>\n\n\n\n<li>Fry until chicken gets browned and slightly caramelized.<\/li>\n<\/ul>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"step-5-add-masalas--cook\">Step 5: Add Masalas &amp; Cook<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Add the <strong>spice masala paste<\/strong> (from Step 1). Fry for 2\u20133 minutes.<\/li>\n\n\n\n<li>Add the <strong>onion paste<\/strong> (from Step 2), fry for 5 minutes on high flame.<\/li>\n\n\n\n<li>Add <strong>1 chopped tomato<\/strong>.<\/li>\n\n\n\n<li>Mix well, adjust salt.<\/li>\n\n\n\n<li>Cover and cook on medium heat for <strong>20 minutes<\/strong>.<\/li>\n<\/ul>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"step-6-finish-the-sukka\">Step 6: Finish the Sukka<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Open the lid and allow chicken to dry out (moisture should evaporate).<\/li>\n\n\n\n<li>Add the roasted <strong>grated coconut<\/strong> (Step 3).<\/li>\n\n\n\n<li>Cook for another <strong>2\u20134 minutes<\/strong> till everything blends well.<\/li>\n\n\n\n<li>Garnish with <strong>fresh coriander leaves (cilantro)<\/strong>.<\/li>\n<\/ul>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"serving-suggestion\">Serving Suggestion<\/h2>\n\n\n\n<p>Serve hot chicken sukka with:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Neer dosa<\/strong><\/li>\n\n\n\n<li><strong>Steamed rice<\/strong><\/li>\n\n\n\n<li><strong>Chapati or parotta<\/strong><\/li>\n<\/ul>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p><\/p>\n","protected":false},"excerpt":{"rendered":"<p>This Chicken sukka recipe, I am sharing here is a Mangalore-style dry chicken curry with homemade sukka masala.
